The cake looks beautiful!
I'll have to tell a funny red velvet story I heard recently: it was the "bakers" first red velvet cake and they had no idea how much red food coloring was needed until they'd already stirred the cake together with one little container of red. Sent someone to the store for more, but by the time they added it and got the cake into the oven it didn't rise/cook properly so they had to put a bunch of icing in the middle to fill in the hole. Fortunately it still tasted good.
